We have chosen to carry on my Grandmother's traditional Sunday dinner, alternating between roast chicken and pot roast....it is delicious twice (not counting sandwiches), because the initial meal sets us up for a wonderful soup later in the week. We save all the little bits of leftover greens and veggies, use up this and that from the fridge, add some broth and make croutons out of saved heels of bread. I think sometimes the soup is better than the roast. I heart leftovers.
